Recap: Eggland’s Best IG Takeover

On Tuesday, I had the amazing opportunity to takeover the Instagram pages of one of my favorite companies, Eggland’s Best. I’ve shared before about the ways that Eggland’s Best Eggs are better than ordinary eggs – they have 6x more vitamin D and 10x more vitamin E, among other benefits.  We go through a minimum of two dozen eggs a week in the Hetrick house so this partnership is a perfect fit!  I had so much fun sharing some new recipes and how I fit EB eggs into my diet.

EASY BREAKFAST HACK

I’ll admit to reheating eggs from time to time – especially when I’m traveling and have to pack them in a cooler and bring them to hotels.  This little trick makes the perfect fluffy scrambled egg, even when reheated.  I use them in my Make-ahead Southwest Breakfast Burritos, too.  

CREPES FOR LUNCH?  YES, PLEASE!

The Mr. and I were just laughing about how one of our favorite date night spots isn’t a fancy restaurant – it’s the 24 hour breakfast place a few blocks over.  My dinner-of-choice there is a savory chicken crepe with spicy cream sauce that we’ve started to also try and replicate at home, with a twist.  Start with a basic crepe recipe, like this one from the Eggland’s recipe archive.  Skip the sugar to save on carbs and make the perfect savory crepe.  Then fill with your favorite veggies + protein!  Top with a savory sauce and you’ve got a dinner that looks as impressive as it tastes.

DIY SNACK BOXES!

My lovely friend, Rebecca, from Happily The Hicks shared her DIY snack box on Instagram a few weeks ago, and I knew I had to make my own (she was kind enough to let me borrow her idea).  They’re so easy to prep on a Sunday and carry as your afternoon snack all week, with lots of protein and healthy fats.  Mr. H may have stolen most of these to bring to the office before I could claim mine!

QUICK DINNER IDEAS

We love bold flavors around here, but what I don’t love is spending hours cooking after a long travel day or a tough workout.  These salmon burgers were an experiment a few weeks ago that turned out so well, they’ve become a dinner staple!  And, this preggo is super happy with all of the nutrients and Omega 3 Fatty Acids they carry.  They’ve even won over my anti-salmon husband!

The aioli recipe is also likely to make a repeat appearance for burger + french fry Sunday night dinners in our house.  More on that soon, too!
