When I used to work in field sales, one of my favorite Friday splurges was to call in Chili’s southwest egg rolls to-go and eat them for lunch in between calls. It’s no wonder I weighed about 30 lbs more than I do now! One order has 41 grams of fat, 137 carbs, and 45 grams of protein for a whopping total of 800 calories. That’s almost a days worth of macros – assuming, of course, that all I ate around that was egg whites and chicken (hello protein targets!).
The craving hit again this weekend after seeing a Chili’s to go ad. So, we set about making our own healthier version. We upped the protein, added a ton more veggies, used low fat cheese, and subbed egg roll wrappers baked in the oven or air fryed, instead of deep fried tortilla wrappers.
You can cook these in a toaster oven, oven, or air fryer (directions for each below). We love our countertop toaster oven/air fryer combo – it cooks every meal perfectly and looks great on our counter.
The result? A tasty snack that hit all those cravings for only 2 fat, 15 carbs, and 12 protein per roll. Yum!
Baked Southwest Eggrolls
Ingredients
- 20 egg roll wrappers
- 1/2 large red bell pepper
- 1 bunch green onions
- 2 jalapeno peppers
- 1 bag frozen spinach thawed
- 1 small can of sweet corn
- 1 can of black beans drained
- 1 T cumin
- 1 T chili powder
- 3 T fat free cream cheese
- 4 oz part skim shredded mexican blend cheese
- Salt, black pepper, and cayenne pepper to taste
Instructions
- Preheat oven to 450. If you're using a toaster oven or air fryer, skip this step.
- Finely dice the bell pepper, green onion stems, and jalapeños.
- Using cooking spray, saute in a nonstick skillet over medium heat for 3-5 minutes.
- Add spinach, corn, black beans, and seasoning. Cook for an additional 3-4 minutes.
- Remove from heat. Add cream cheese and mix well.
- Fold in shredded cheese.
- Add 1/4c mix to the center of an egg roll wrapper and roll per the package instructions.
- Place egg rolls on lightly oiled (using cooking spray) baking sheet.
- Bake at 450 for 20 minutes (air fry at 350 for 15 min), turning over halfway thru baking time.
- Serve with guacamole or greek yogurt ranch.
