Single Serving Apple Crisp

The Mister loves pie. Like LOVES, chooses as his last meal, pie. I, on the other hand, am impartial. Give me a good cake any day. Cobbler is the perfect compromise. It has all of the pie filling goodness with the ideal crust/cake to fruit ratio to overcome my distaste for too-fruity pie. 

Unfortunately, making the perfect apple cobbler (A) takes way more time than I can often dedicate and (B) produces way more than I could ever eat – much less fit into my macros!

Enter this single-serving apple crisp. It takes a few minutes to prep, cooks in a single pan, and can easily be adjusted to hit your macros, since every component is 100% in your control.


Take the recipe below as a guide. Up the apples, reduce the butter, and increase the oatmeal as you like. Throw in diced pears or canned cherries to mix up the flavor. Or add brown sugar to the mix for more sweetness on high carb day. Then top with No Sugar Added Bluebell or Vanilla Halo Top and a little fat free whipped cream and enjoy!

Single Serving Apple Crisp

Servings 1

Ingredients

  • 1 sweet apple try Gala, Fiji, or Honeycrisp
  • 1 T cinnamon
  • 1 T reduced fat margarine or butter
  • 1/4 c dry rolled oats

Instructions

  • Chop or slice apple. Weigh to determine macros (you don't have to use the whole apple)
  • Heat butter or margarine in skillet over medium heat until melted
  • Add apples. Saute until cooked; 3-4 minutes.
  • Add cinnamon. Mix well.
  • Add oats. Mix well.
  • Serve over no sugar added ice cream. Top with whipped cream.
