Recipe Review: SkinnyTaste Easy Bagels

I’m in a few IIFYM groups on Facebook and everyone keeps raving about SkinnyTaste’s Easy Bagel recipe.  Our kitchen has been under renovation for a couple of weeks, so as soon as we got the green light to start using the counters again, I knew I had to give this recipe a try.  I mean, 27 carbs for a bagel?  Easy?  Only 5 ingredients? 

It seemed to good to be true.  And it almost was.

My first attempt at making these bagels left me a little frustrated.  The ingredients were so simple!  But as expected, mixing greek yogurt into flour with no other water or liquid was really difficult.  A stand mixer is definitely out for this (it would have just pushed everything around).  A spatula or fork is really the only way to go.  I gave up on that quickly, too.

The mixture was just sticking in these big clumps.  Against my better judgement, I went in with my hands to finish mixing.  Y’all, that solved my problem.  I could easily break down those clumps and knead the dough at the same time, all within the confines of the bowl.  My hands were a mess, but the dough was ready! 

Chop into four pieces, roll and form into little rings, add a quick egg white wash and some seasonings.  Into the oven they went and 25 min later, bagel perfection!  No boiling required. 

They were really, really tasty!  Like ate two in one sitting tasty.  The downside?  That was a decent amount of work for just 4 bagels!

A few tips if you’re going to try this recipe for yourself:

ONE //  Double it

These bagels only stay good on the counter for a few days, so you don’t want to end up with more than you can eat (although her recipe does say you can freeze the dough).  8 was the perfect number for a week – or 4 days, if you’ve got a preggo and a guy who eats 2,500+ calories a day in your house! 

TWO // Use your hands

Use the spatula for a few turns, then opt to mix with your hands.  It’s a little messier, but will save you time in the long-run (you’re going to have dough stuck to your hands either way…). 

THREE // Get creative with the toppings! 

We’ve been using the TJ’s Everything But The Bagel Seasoning blend for most of ours.  I really want to try mixing in some frozen blueberries or topping with some cinnamon in the next batch.  I’m not sure how the fruit will turn out – I’ll let you know!

OVERALL ASSESSMENT:  Tasty?  Yes.  Easy?  Well, technically yes, for a bagel recipe.
